Golden Syrup Flapjack Recipe – Classic British Oaty Treat

If you’re after a truly traditional bake, this Golden Syrup Flapjack recipe is about as British as it gets. Sweet, chewy, buttery and simple, these oaty traybake bars are a nostalgic teatime staple that generations have loved.

Made with just a handful of store cupboard ingredients – porridge oats, butter, sugar and golden syrup – they’re also a great recipe to bake with kids or throw together when you’re short on time. And while they may sound humble, don’t underestimate the satisfying joy of biting into a soft, chewy flapjack with a perfectly golden edge.

What is a flapjack?

In Britain, a flapjack is a baked oat bar, quite different from the American pancake of the same name. British flapjacks are traditionally made with rolled oats bound together with melted butter, soft brown sugar, and golden syrup – that iconic amber syrup found in nearly every UK baking cupboard.

Golden syrup is what gives these bars their rich, sticky-sweet flavour and slightly chewy texture. You could try swapping it for honey or maple syrup, but nothing quite beats the deep toffee-like taste of real golden syrup.

Chewy vs Crunchy – The Great Flapjack Debate

Some like their flapjacks soft and chewy, others prefer them crisp and crunchy. This version leans towards the chewy side – which in our opinion is the best way to enjoy them. The key is to bake them just long enough to set the mixture, but not so long that they dry out and harden.

If you like a firmer flapjack, simply leave them in the oven a few minutes longer – but keep an eye on the edges!

Variations and Add-ins

Once you’ve mastered the basic golden syrup flapjack recipe, you can get creative with the additions. Popular extras include:

You can even replace some of the oats with a handful of muesli or granola for added texture and flavour.

These may be oat-based, but let’s be honest – flapjacks are a sweet treat. With all the butter and sugar, they’re firmly in the indulgent snack category (and that’s perfectly fine!). Think of them as a homemade upgrade from a shop-bought cereal bar, with none of the additives or plastic packaging.

How to make Golden Syrup Flapjacks

Yield: 15

Fruity Flapjacks (cereal bars)

Fruity flapjacks (cereal bars)

These delicious fruity flapjacks (cereal bars) are a great snack for all the family. Make sure you have a good place to hide them because they will GO quickly!

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

Ingredients

  • 175 grams salted butter
  • 175 grams soft brown sugar
  • 1 tbsp golden syrup
  • 250g porridge oats
  • 60g sultanas

Instructions

  1. Melt together the sugar, butter and golden syrup in a saucepan, stirring constantly. When the butter has melted, then remove from the heat and add the oats and sultanas. Mix well.
  2. Pour the mix into a greased baking tin and flatten it down. Be aware that in the oven the mix will find its own boundaries so make sure the tin is the right size for the thickness of flapjack you want.
  3. Place into a pre-heated oven at 150C and bake for about 30 minutes or until the mix has turned a golden colour. Do not overcook or the flapjacks will be very hard.
  4. Remove from the oven and after 15 minutes mark out rectangular bars and then wait until fully cool (despite the temptation to eat them warm!). Then separate and store in an airtight plastic box.

Notes

Serve up with a nice cup of tea.
