Marmite Rarebit Toast: A Bold British Classic Reimagined
There are few things as comfortingly British as cheese on toast. But when you swirl in Marmite and a dash of mayo? You’ve entered Marmite Rarebit territory – an umami-loaded, golden grilled beauty that’s fast, filling, and seriously addictive.
This quick toastie takes inspiration from the classic Welsh Rarebit: a decadent, cheesy concoction traditionally made with a rich cheese sauce flavoured with mustard, beer, and Worcestershire. But here, the effort is stripped right back without compromising on flavour. This version keeps it real – and ridiculously good – with punchy Marmite, creamy mayo, and a strong cheddar, all melted onto thick, crusty bread.

A British Staple With a Modern Hack
Marmite has long held its place in British kitchen cupboards. Whether you’re firmly in the “love it” or “hate it” camp, there’s no denying its impact. This savoury spread, made from brewer’s yeast extract, brings a salty, slightly bitter depth to toast, soups, and sauces. In the Marmite Rarebit Toast, it plays beautifully off creamy mayo and melty cheese – cutting through the richness like a flavour conductor.
Many of us were raised on Marmite soldiers or Marmite on buttered toast, but this version is the grown-up cousin: more indulgent, a little more rebellious, and impossible to eat just one of.

A Marmite Rarebit Toast That Plays by Your Rules
One of the best things about this recipe? You can freestyle it.
Want a sharper flavour? Use vintage Irish or English cheddar. Prefer something more mellow? Go with Red Leicester or a slice of Gouda. Fan of sourdough? Absolutely, go for it. Fancy a little heat? Add a sprinkle of cayenne or a splash of English mustard to the Marmite and mayo mix before spreading.
This recipe welcomes creativity, so if you’ve got a favourite artisan bread or a locally made cheddar, bring it on. Just skip the processed cheese – your taste buds deserve better.
Faster Than a Toastie, Richer Than a Grilled Cheese
Let’s be honest: sometimes we just need something quick, hot, and satisfying. A full Welsh Rarebit may be amazing, but not everyone has the time (or leftover beer). The Marmite Rarebit Toast gives you that golden top and intense cheesy depth, but it’s ready in minutes. No roux, no saucepans, just a bowl, a grater, and your grill.
Even better, there’s always a chunk of cheddar lurking in the fridge and a jar of Marmite waiting patiently in the pantry. Mayo? Always on hand. All you need is a bit of bread and your broiler (or grill, for the Brits) and you’ve got a snack that tastes way fancier than it is.

Marmite Cheese Toast
This simple recipe for marmite cheese toast has a little bit more than your basic grilled cheese. Prefect as a quick hot snack at any time of the day.
Ingredients
- 2 slices of bread (brown or white)
- 1 tbsp Hellmann's Real Mayonaisse
- 1 tsp Marmite
- 70g sliced vintage cheddar
Optional
- Freshly Ground Black Pepper
Instructions
- Toast the bread in your toaster until a very light brown, and pre-heat your grill (or broiler).
- Spread the mayo over one side of the toasted bread.
- Mix half the Marmite with the mayo, spreading it thinly on each slice. Do not overdo it with the Marmite (half a heaped teaspoon per slice is plenty).
- Place the sliced cheese on top of the toasted bread and place in the grill until the cheese melts and begins to lightly brown in places.
- Remove from the grill and cut in two before serving.
Notes
Optionally sprinkle with some freshly ground pepper.
