What type of chocolate to use for Chocolate Mousse?

There are plenty of ready-made packaged chocolate mousses out there that you can buy off the shelf in the supermarket that are very tasty.

But they are never quite the same as a homemade one that you have produced yourself. This is a light chocolate mousse which just SUPER delicious!

This is a rich, quick and easy creamy chocolate mousse recipe which is perfect for a dinner party.

This French chocolate pudding can be easily made upfront and refrigerated until you need it. It is great to be able to serve up dessert directly from the fridge!

The recipe uses 70% cacao chocolate which gives a delicious dark chocolate mousse.

You can of course, also add some raspberries or strawberries to give it an extra dimension and set the sweetness of the chocolate off against the tartness of the summer fruits.

The Secret is in the Preparation

The secret to getting the perfect chocolate mousse lies in the meticulous preparation technique.

The chocolate is melted carefully to perfection, creating a velvety base. Then the egg yolks and cream are carefully mixed into the chocolate. Finally, the egg whites and sugar are whisked together until a pale and fluffy mixture is obtained.

This mixture is then gently folded into the chocolate, creating a heavenly blend that is light, yet rich in taste.

The Miracle ingredient – Eggs

I still find it absolutely amazing to see what a variety of foods you can make with eggs.

Eggs are so versatile. But the way that this delicious pudding can be produced by separating the egg whites and egg yolks, and adding them in different ways is nothing short of miraculous.

This easy mousse recipe uses raw eggs, so to be on the safe side, you need to make sure you are using pasteurized eggs.

The result is a simple chocolate mousse recipe that will have your guests drooling and asking for more (so make sure you have made enough for seconds!!).

This dessert doesn’t need dressing up, but a bit of grated chocolate or a dusting of cocoa powder makes it look the part. If you’re hosting, serve it in espresso cups for a bit of French flair.

Pro tip: Always use good-quality dark chocolate. If you wouldn’t eat it on its own, don’t put it in your mousse.

FAQ: How Do You Make an Authentic French Chocolate Mousse?

1. What makes it “authentic”?
Real French mousse uses whipped egg whites – not whipped cream. It gives that signature airy, silky texture without being heavy.

2. Can I use milk chocolate instead?
You can, but it’ll be sweeter and less intense. Stick to dark chocolate (around 70%) if you want the proper French flavour.

3. Is it safe to eat raw eggs?
If you’re concerned, use pasteurised eggs.

4. How long does it keep?
It’ll last up to 3 days in the fridge. Just cover it so it doesn’t pick up any fridge smells, especially if you have some French cheese in there!
