How to make Tuscan Chicken
Creamy Tuscan Chicken : A Flavourful Italian Comfort Dish

This Creamy Tuscan Chicken recipe contains delicious juicy and tender chicken breast cooked in a creamy parmesan, spinach and sun-dried tomato sauce.
Ingredients
- 2 large chicken breasts, cut lengthways into strips.
- 1 medium sized onion, finely chopped
- 1 tsp Dijon Mustard
- 300 ml chicken stock
- 2 large handfuls baby spinach leaves
- 100g dried Italian tomatoes
- 400g cream
- 1/2 tsp garlic granules
- Italian herb seasoning
- 80g grated Parmesan
- 2 tbsp plain flour
- Salt and pepper
- Olive oil
Instructions
- Cut the chicken into strips, and cover them in the Italian herbs and season with salt and pepper. Then roll the chicken strips in the flour.
- Fry the chicken strips in the olive oil in a frying pan until browned on all sides. Then set aside on a plate.
- Add the chicken stock to a pan and put in the chopped onion and the mustard. Mix well and cook on a low heat for about 5 minutes. Then add the cream and the garlic granules and mix well. Cook for about 3 minutes then add the dried tomatoes and the parmesan to the sauce.
- Add the chicken back to the pan and simmer until the sauce thickens a little bit and the chicken is fully cooked. Then add the spinach to the pan and wait until it has reduced before serving.
Notes
Serve with a pasta of your choice or some crusty Italian bread.
