Ingredients
- 300g dry pasta
- 1 shallot, very finely chopped
- Knob of butter
- 125g Roquefort blue cheese (or another blue cheese if you prefer)
- 200ml double cream
- Freshly ground black pepper

Instructions
- Boil the pasta in a saucepan according to the manufacturer's instructions. Meanwhile, melt the butter in the pan and add the chopped shallot. Cook the shallot for about 5 minutes on a low to medium heat, stirring regularly.
- Then add the blue cheese to the pan and wait until it has all melted before adding the cream.
- Stir well and heat for about one minute, seasoning with black pepper to suit. You will not need to add any salt, as the cheese is already very salty. Finally, garnish with the chives.
- Drain the pasta and add back into the saucepan. Then add the sauce and mix well before serving.
