Fried Manioc: A Delicious Brazilian Snack Alternative to French Fries

Fried manioc, often known as fried cassava or yuca fries, is another popular Brazilian snack made from the cassava root. Cassava is a starchy vegetable also called manioc or yuca. Its starch is used to produce tapioca.

For those wondering what is manioc, it’s a tropical root vegetable native to South America and widely consumed in many parts of the world. When fried, it offers a crispy, golden snack that is a delicious alternative to the more common potato fries.

While both fried manioc and fried potato fries are beloved for their crunchy texture, manioc (or cassava) offers a unique twist. The exterior of fried cassava chips or sticks is crispier, while the inside remains dense and creamy. This difference in texture makes fried manioc a heartier, more substantial snack compared to potato fries. It is one of my favourites that we order regularly at our local Brazilian pub, but it is very filling.

Is manioc healthy?

From a health perspective, cassava contains more carbohydrates and slightly more calories than potatoes. For example, fried cassava chips calories are around 150-200 per serving, which is a bit higher than traditional potato fries. However, cassava is gluten-free, making it a great option for those with gluten sensitivities. It is also packed with nutrients like vitamin C, good for immune health.

Fried Manioc - The Brazilian Snack You Should Try

Cook Time: 30 minutes
Additional Time: 5 minutes
Total Time: 5 minutes

Fried manioc is a delicious Brazilian treat. Great on its own or with a dip of your choice.

Ingredients

  • 1 cassava root
  • Vegetable or sunflower oil to fry
  • Salt

Instructions

  1. First peel the root. I used my potato peeler to do this, but some people peel it like a banana.
  2. Cut into manageable sized pieces (normally long chip shaped sizes, but thicker than french fries) and boil in water for between 20 and 30 minutes until soft, but not falling apart.
  3. Then pour the manioc into a sieve or cullender to drain and dry on paper kitchen towels.
  4. Get your oil to a hot temperature and add the manioc to the pan, being careful not to spatter oil.
  5. Fry for about 5 minutes or until the outside is crisp and slightly browned. Do not overcook.
  6. Season with salt and serve.

Notes

Serve on its own or with the dip of your choice.
