How to make a Creamy Tuscan Salmon Pasta
Creamy Tuscan Salmon Pasta (with Spinach)
Creamy Tuscan salmon pasta with spinach in a rich parmesan garlic sauce. A comforting Italian-inspired dish made with sustainable salmon.
Ingredients
- 550g Salmon Fillets
- 200g cream
- 200g chicken stock
- 3 garlic cloves
- 7 dried Italian tomatoes
- 1 tbsp Olive Oil to fry
- Handful of spinach
- 1 tsp Thyme
- 1 tsp Dried Rosemary
- 40g Parmesan
- 3/4 cup white wine
- 100g Pasta p.p.
- Salt and Pepper
Optional:
- Pine nuts
Instructions
- Cook the pasta according to the manufacturer's instructions (I used tagliatelli).
- Sprinkle the salmon with salt and pepper and the herbs. Cut the dried tomatoes smaller and rinse them. If using pine nuts, fry them briefly in some olive oil, then put them aside on some kitchen paper.
- Meanwhile, heat the olive oil in a pan and fry the salmon pieces. When the salmon is cooked, you should be able to remove the skin easily with a knife. I like to have a crispy piece of salmon so I cook it a bit longer than normal, but cook to your preferred texture.
- At the same time, make the sauce. Fry the garlic for a few minutes, then add the white wine. Cook for a while to remove the alcohol, then add the stock. Let it bubble for a bit before adding the cream and the tomatoes. Finally, add the parmesan and the spinach and mix it all together. If it is too thick, add some water to dilute.
- Serve the salmon on a bed of pasta and pour the sauce on top. Garnish with the pine nuts if required.
