Bean Soup

Ingredients
- 2 x 400g Drained Butter Beans
- 2 x medium sized potatoes
- 250g bacon blocks
- 3 garlic cloves
- 1 vegetable stock cube
- 3 carrots
- 1 large onion

- Some dried pasta
Instructions
- Peel the onion and garlic. Chop the onion in half and chop the garlic finely. Peel the potatoes and carrots. Chop the potatoes in half. Then place the garlic, onion, potatoes, carrots and one of the beans jars in a saucepan and make enough stock to cover the ingredients.
- Bring to a simmer. On another hob, fry the pieces of bacon until the fat is rendered and the bacon is cooked.
- After 15 minutes, remove 2 carrots and 2 potato halves from the saucepan and put on a chopping board. Then add the cooked bacon to the pan and blend everything together with a hand blender.
- Then add the other bean jar and pasta to the soup and bring to a simmer again. Then finely chop the potatoes and carrots and add back into the pan. Cook for a further 10 minutes or until the pasta is cooked.
